Cilantro Virgin Dressing

  1. In a food processor, finely chop the onions, garlic and pepper. Add the cilantro and lime juice and chop until coarse. Add the oil and mix thouroughly. Season with salt and pepper.
  2. Delicious with white fish, grilled chicken, or grilled steak.


This sauce will keep for about 1 week in the refrigerator. In contact with air, it tends to darken; just add a thin layer of olive oil on the surface to prevent oxidation.
