- 1 onion, finely chopped
- 3 tbsp (45 ml) olive oil
- 1 lb (450 g) mixed ground meat (beef, veal, pork)
- 2 garlic cloves, finely chopped
- 2 oz (55 g) chorizo, pepperoni or other dry sausage, finely chopped (optional)
- 2 cans (28 oz/796 ml each) whole plum tomatoes, crushed
- 1/2 tsp dried oregano
- 1 bay leaf

Preparation

- In a large pot over medium-high heat, soften the onion in the oil. Add the ground meat and cook, breaking it up with a wooden spoon, until nicely browned. Season with salt and pepper. Add the garlic and sausage. Cook for 2 minutes while stirring. Add the tomatoes, oregano and bay leaf. Mix well. Bring to a boil. Simmer over low heat for 1 hour or until the sauce thickens. Adjust the seasoning.

Freeze flat in resealable bags to save space in the freezer.

The chorizo (or dry sausage) is not required for this recipe, but the spices it contains are a great asset to the sauce.
