Dressing
1/4 cup (60 ml) water
2 tablespoons (30 ml) rice vinegar
1 tablespoon (15 ml) sugar
1 tablespoon (15 ml) soy sauce
1 tablespoon (15 ml) lime juice
Grated zest of 1 lime
2 tablespoons (30 ml) unsweetened, unsalted peanut butter
1 pinch cumin
1/4 teaspoon (1 ml) ground coriander
1 pinch Cayenne pepper
Salad
6 cups (1.5 litres) baby spinach
2 cups (500 ml) bean sprouts
2 green onions, sliced diagonally
1/3 cup (75 ml) salted peanuts, toasted and coarsely chopped
Salt and pepper
Preparation
Dressing
In a saucepan, bring all the ingredients to a boil, stirring constantly. Allow to cool.
Salad
In a bowl, toss all the ingredients with the dressing. Adjust the seasoning.
Serve immediately.
