- Place the pistachios on a plate and roast in the microwave for 2 minutes. Let cool.
- On a work surface, halve the figs lengthwise.
- Using a mortar and pestle, finely crush the pistachios. Sprinkle with fleur de sel, to taste, and combine well.
- Place a dollop of goat cheese onto each fig half. Arrange on a serving platter. Sprinkle with the crushed pistachios and drizzle with honey.
Goat cheese can be replaced by fresh ricotta.
