Ingredients

- 8 very ripe fresh raspberries
- ½ oz (15 ml) cane syrup or simple syrup
- 1 oz (30 ml) vodka (see note)
- ½ oz (15 ml) lime juice
- ½ cup (125 ml) ice cubes
- ½ cup (125 ml) cold sparkling water
- 1 ½ cups (20 g) cotton candy

Preparation

- Place the raspberries in a cocktail shaker. Add the cane syrup. Using a cocktail muddler, crush the raspberries to extract the juice.
- Add the vodka, lime juice and ice cubes to the shaker. Mix vigorously for 1 minute. Strain through a small sieve into a tall glass or a wine glass. Top up with the sparkling water. Garnish with the cotton candy and add a straw. Before drinking, use the straw to stir the cotton candy into the cocktail until melted.

Turn this cocktail into a mocktail by simply replacing the vodka with the same amount of sparkling water.
