Ingredients: 2.2 lb (1 kg) chicken drumsticks; 3/4 lb (340 g) beef cubes or beef shank; 2 onions, unpeeled, cut into pieces; 2 carrots, scrubbed clean and cut into pieces; 2 celery stalks, cut into pieces; 1 garlic bulb, halved; 1 rosemary sprig; 1 clove; 1 tbsp (15 ml) tomato paste; 1/2 tsp black peppercorns; 10 cups (2.5 litres) water

Preparation

- In a large pot, combine all of the ingredients. Season lightly with salt. Bring to a boil. Simmer for 2 hours 30 minutes. Let cool.
- Strain the broth. You should obtain a total of 8 cups (2 litres) of broth. If not, top off with water. Adjust the seasoning. Keep the meat for another use. Compost the aromatics.
