Nut Kataifi

Ingredients

• Kataifi

  • 1/3 cup (45 g) shelled pistachios
  • 1/3 cup (60 g) almonds
  • 1/2 cup (50 g) walnuts
  • 1 tbsp sugar
  • 1/2 tsp ground cinnamon
  • 1/2 lb (225 g) unsalted butter, melted
  • 1/4 tsp salt
  • 3/4 lb (340 g) frozen kataifi dough, thawed (see note)

• Syrup

  • 1 cup (210 g) sugar
  • 3/4 cup (180 ml) water
  • 1/3 cup (75 ml) honey
  • 1 cinnamon stick
  • 1 clove
  • 1/2 lemon, zest removed with a peeler
