Ingredients

• Crust

  • 2 tbsp (30 ml) milk
  • 1 lemon, zest finely grated
  • 2 tsp (10 ml) lemon juice
  • 1 cup (150 g) unbleached all-purpose flour
  • 2 tsp icing sugar
  • 1/8 tsp salt
  • 1/2 cup (115 g) cold unsalted butter, diced

• Filling

  • 6 tbsp (80 g) sugar
  • 1 tbsp quick-cooking tapioca
  • 2 cups (300 g) fresh or slightly thawed frozen blueberries
  • 2 tsp (10 ml) lemon juice
  • Milk, for brushing
  • 1 tsp demerara-style cane sugar
