The Best Ways to Store Tofu

At the grocery store, you’ll find pressed tofu, sold in plastic airtight packages, as well as silken tofu, offered in aseptic cardboard packages. But how can you optimize its storage to avoid wasting it? Here are our tips.

In the Fridge, with Water

Tofu (soft or firm) can be stored in the refrigerator until its expiry date if you haven’t opened the package yet. If opened, keep it in the fridge in an airtight container filled with water that you should ideally change every day, or at most, every two days. By changing the water regularly, tofu can be stored for about a week.

In the Fridge, with No Water

It’s not necessary to refrigerate silky tofu that hasn’t been cooked yet. Once the package is open, put the leftover tofu in an airtight container that you can keep in the refrigerator without adding any water. Tofu can be stored this way for 3 days.

In the Freezer

Tofu can be frozen, but you should know that this gives it a slightly yellowish tint. It also changes the texture, which becomes more granular and rubbery. To store it, place it in a sealed, airtight freezer bag or wrap it in plastic film, then in a piece of aluminum foil. Its shelf life in the freezer is two months. Freezing silken tofu causes it to lose its water and take on a curdled appearance, so it’s best to avoid it.
