How to Recover an Oversalted Sauce

Is the sauce in your stew or meat dish much too salty, as if you’d dropped the salt shaker into it? What can you do to recover it and avoid having to pour it down the drain? Here’s a trick that works well to make it less salty.

A Peeled Potato

We tend to think that sugar is the miracle ingredient for balancing a sauce that has too much salt. However, adding sugar to make up for it is not the right solution. What do you need? Add slices of a peeled potato to the sauce. As they cook, they will absorb some of the salt…as well as liquid. Add some stock and thicken the sauce with toasted flour and, above all, don’t forget to remove the potato slices at the end of the cooking time.
