Our Tips for Optimizing Pesto Freezing

When you make homemade pesto, it’s absolutely fine to freeze it to preserve its freshness, as long as you do it properly. Here’s what you need to know.

Put It in an Ice CubeTray

For optimal preservation of herb pesto in the freezer, ice cube trays are especially convenient. Pour the mixture into the cavities, filling them only three-quarters of the way. Then add a thin layer of oil on the surface of the pesto to prevent oxidation. The addition of oil limits contact with air and prevents the top of the pesto from darkening.

Similarly, you should drizzle oil over any portion of pesto kept in the fridge.

Transfer to Bags

Once the cubes are frozen, simply remove them from the mould and transfer them to a freezer bag or airtight container. In the freezer, pesto can keep for about 6 months.
