The recipe is incredibly simple: just put pieces of pineapple and clementines in a container, and add a vanilla bean, a bit of sugar and white rum. Since the flavours of this original recipe from Réunion island improve with time, you must let the rum macerate at least two weeks before giving it away. So, make it well in advance. Present the gift in a one-litre bottle decorated with a small wreath made from a twisted sprig of rosemary.

Ingredients

- 3 slices fresh pineapple, each 1/2 inch (1 cm) thick, peeled and cut in half
- 1 clementine, washed and cut into slices ¼ inch (5 mm) thick (see note)
- 1 vanilla bean, split lengthwise and seeds scraped
- 1/3 cup (80 g) cane sugar
- 3 cups (750 ml) white rum

Preparation

- In a 4-cup (1 litre) airtight glass jar, place all of the ingredients. Seal tightly. Shake the jar. Let macerate for 2 weeks at room temperature, shaking the jar a few times (see note).

Note from Ricardo

Since the jar will be quite full, do not keep the end pieces of the clementine.

You can leave the rum to macerate for several months, but we suggest that you taste it regularly to ensure that the flavours do not become overly intense.
