Pineapple Tart

Ingredients

• Crust

  • 1 cup (150 g) unbleached all-purpose flour
  • ½ cup (65 g) icing sugar
  • ¼ tsp salt
  • ½ cup (115 g) unsalted butter, cold and diced
  • 1 tbsp (15 ml) ice water

• Pineapple Cream

  • ½ cup (105 g) sugar
  • 3 tbsp cornstarch
  • 3 eggs
  • 1 ½ cups (375 ml) pineapple juice
  • ¼ cup (60 ml) lime juice
  • ⅓ cup (75 g) unsalted butter, cubed and softened

• Toppings

  • ½ cup (125 ml) 35% whipping cream
  • 1 tbsp icing sugar
  • ½ fresh pineapple, peeled, cored and cut into thin slices
  • Maraschino cherries, to taste
