Mortadella Sandwiches with Pistachio Spread

Ingredients

• Pistachio Spread

  • 1/2 cup (65 g) roasted shelled pistachios, finely chopped
  • 1 tbsp (15 ml) olive oil, plus more for drizzling
  • 1 tbsp (15 ml) honey
  • 1 tbsp (15 ml) lemon juice
  • 1/2 tsp red pepper flakes
  • 1 lemon, zest finely grated

• Sandwiches

  • 2 pieces focaccia bread, homemade (see recipe) or store-bought, each about 5 1/2 x 3 1/2 inches (14 x 9 cm) (about 1/4 of the focaccia, cut into 2 pieces)
  • 1/2 cup (125 ml) ricotta cheese
  • 1 package (175 g) sliced mortadella
  • 1 1/4 cups (30 g) arugula
