For a stylish presentation, make large chocolate curls by spreading tempered chocolate on parchment paper, rolling it up and freezing it for 10 minutes. They break apart easily and keep their rounded shape. A simple and effective garnish!

Ingredients

- 3 oz (85 g) dark chocolate, chopped

Preparation

- In a glass bowl, melt two-thirds (2 oz/55 g) of the chocolate over a pot of simmering water or in the microwave oven. Add the remaining chocolate and mix vigorously until melted. The chocolate is now tempered and ready to use.
- On a large sheet of parchment paper, spread the chocolate out in a thin layer. Loosely roll the parchment paper into a log about 1 ½ inches (4 cm) wide. Place the roll on a baking sheet.
- Freeze for 10 minutes or until the chocolate has completely set.
- Unroll the parchment paper over the baking sheet, letting the chocolate shavings fall onto the baking sheet as you go. Freeze the chocolate shavings in an airtight container until ready to use to decorate your desserts.
