With its vibrant red hue, the Paper Plane cocktail, created in 2008 by New York bartender Sam Ross, is perfect for the holidays. Shake equal parts bourbon, orange bitter liqueur, amaro and lemon juice with ice for a bold, balanced classic to get the party started!

Ingredients

- 1 long lemon zest, removed with a vegetable peeler
- 1/2 cup (125 ml) ice cubes
- 1 oz (30 ml) bourbon
- 1 oz (30 ml) bitter orange liqueur (see note)
- 1 oz (30 ml) amaro (see note)
- 1 oz (30 ml) lemon juice

Preparation

- Place a Champagne coupe in the freezer for 5 minutes.
- Meanwhile, on a work surface, using a small knife, remove the white pith from the lemon zest. Cut the zest into a long rectangle. Cut the two short sides of the rectangle on an angle. Make an incision lengthwise down the centre of the zest. Curl the zest around itself.
- In a cocktail shaker, vigorously mix the ice cubes with the bourbon, orange liqueur, amaro and lemon juice. Strain into the chilled glass. Rub the rim of the glass with the curled lemon zest, then hang the zest on the rim of the glass to decorate.

To make this original take on a classic cocktail, we recommend using an Aperol-style orange liqueur.

We also recommend using Amaro Nonino Quintessentia for this cocktail. Notes of spice, licorice and herbs add a level of complexity to this Paper Plane. Its colour is lighter than other types of amaro.
