Cherry Chip Cake with Chocolate Cream Cheese Frosting

Ingredients

• Cake

  • 3/4 cup (180 ml) milk
  • 1 tbsp (15 ml) lemon juice
  • 1/2 tsp (2.5 ml) almond extract
  • 1/2 tsp (2.5 ml) red liquid food colouring
  • 1 3/4 cups (265 g) unbleached all-purpose flour
  • 1 cup (135 g) frozen cherries, thawed and coarsely chopped
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3 eggs, at room temperature
  • 1 1/4 cups (265 g) sugar
  • 3/4 cup (180 ml) vegetable oil

• Cherry Filling

  • 3 tbsp sugar
  • 4 tsp cornstarch
  • 2 cups (270 g) frozen cherries, thawed and halved
  • 2 tbsp (30 ml) lemon juice
  • 1/4 tsp (1 ml) almond extract

• Chocolate Frosting

  • 1 block (250 g) cream cheese, softened
  • 1/2 cup (115 g) unsalted butter, softened
  • 1 1/2 cups (195 g) icing sugar
  • 6 oz (170 g) 70% dark chocolate, melted and cooled

• Pink Frosting

  • 1/2 cup (115 g) unsalted butter, softened
  • 1 1/2 cups (195 g) icing sugar
  • 1 tbsp (15 ml) milk
  • Red liquid food colouring, to taste

• Topping

  • 8 maraschino cherries, patted dry
