The dough can be made up to 2 days in advance. Let sit out at room temperature for 15 minutes before using. You can also use store-bought pie dough.

You can brush the dough with egg wash twice before making the decorative incisions: brush the dough with the beaten egg and refrigerate for 15 minutes. Brush the dough again, then make your shallow incisions and a small hole at the centre.
