There are now a multitude of non-alcoholic gins on the market. Although most flavour profiles will work for this recipe, Patrice Plante recommends choosing a gin with an herbal or juniper berry profile.

The egg white can be replaced with 1 oz (30 ml) aquafaba, the liquid found in cans of chickpeas. Aquafaba can be whipped into a stable foam much like an egg white. Alternatively, you can use a few drops of vegan emulsifier but this type of product contains some alcohol.
