The soy-marinated eggs will keep for 1 week in the refrigerator. They will become slightly firmer and their flavour will continue to intensify during that time. To prevent the eggs from getting too salty, you can remove them from the marinade after 12 hours and transfer them to an airtight container.

For another variation, add 1 tsp (5 ml) toasted sesame oil to the marinade.
