These doughnuts, courtesy of our own chef Alexane Labonté, are a bit different from the more usual flavours. If you enjoy maple or tropical fruit, try this recipe for something off the beaten path. Prepare the doughnuts and, once fried, dunk them in a glaze that was made in the microwave beforehand. One with maple, the other with passion fruit, these two flavours balance well together, yielding results worthy of your favourite doughnut shop.

If you would like to prepare only one flavour of doughnuts, double the quantity of the chosen glaze.

We place the raw doughnuts on a square of parchment paper to make it easier to transfer into the deep fryer.

Cooking the glaze in the microwave makes it runnier without having to add liquid. This way, the doughnuts are perfectly coated with a crunchy glaze.
