Ingredients: 3/4 cup (180 ml) milk; 1 egg; 1 tbsp unsalted butter, melted, plus more for cooking; 3/4 cup (115 g) unbleached all-purpose flour; 1/4 cup (40 g) buckwheat flour; 1 tsp baking powder; 1 tsp sugar; 1/2 tsp salt; 1/2 cup (125 ml) sour cream; 2 packages (100 g each) salmon gravlax cut into 24 pieces 1 tbsp capers; 1 tbsp capers; Dill fronds, to decorate

Preparation

Blinis
- In a bowl, whisk together the milk, egg and melted butter.
- In another bowl, combine both types of flour with the baking powder, sugar and salt. Make a well at the centre of the dry ingredients and pour in the milk mixture. Mix until smooth.
- Preheat an electric crepe maker on max heat or a non-stick skillet over medium heat. Once the cooking surface is hot, brush it with butter.
- For each blini, use about 1 tbsp (15 ml) of the batter to form a crepe about 1 1/4 inches (3.5 cm) in diameter.
- Cook a few blinis at a time for about 2 minutes on each side. Set aside on a plate. Adjust the temperature of the machine as needed to allow the batter time to cook before browning too quickly.
Assembly
- Top each blini with about 1 tsp (5 ml) of the sour cream and a piece of salmon. Garnish with the capers and dill fronds.
