This upside-down apple cake is a comforting seasonal treat. It consists of thinly sliced apples arranged in a pan over a generous layer of caramel. Drizzle with a warm syrup flavoured with star anise, cinnamon and ginger, and then bake covered with aluminum foil. Once the fruit is tender, pour the cake batter over top and continue baking. The Royal Gala apples can be replaced with Cortland or Granny Smith apples.

Do not use a springform pan for this recipe because the caramel is likely to seep out the bottom. If you do not have the baking dish suggested above, you can use an ovenproof skillet of the same size.

The quantity of apples may seem enormous, but don’t worry! The apples will shrink by about half as they cook to make room for the cake batter.
