This vegetarian condiment is both sweet and fragrant, and is generally found in southern India, although it's enjoyed elsewhere in the country, too. Made with lentils, it features a mix of chopped vegetables like eggplant, onion, carrot and tomato. It also includes spices, tamarind purée made from the pulp of this tangy fruit, as well as brown sugar. It's a happy blend that's perfect for serving with potato-stuffed crepes (masala dosa).
