In Hindi, koftas are meatballs and malai means "cream". This dish, often served on special occasions, is made from paneer (a firm, mildly salted cheese) and potatoes, in a perfectly seasoned, velvety cashew sauce. Serve on a platter to highlight their golden and crispy texture.

Note from Ricardo

Freeze the fried cheese balls on a baking sheet lined with parchment paper. Once frozen, transfer them to an airtight container. They will keep in the freezer for 3 months. You can reheat them from frozen in an oven preheated to 350°F (180°C) for 10 minutes or in an air fryer for 6 minutes at 325°F (165°C).

Freeze the sauce and cheese balls separately.
