A portion of the batter is flavoured and coloured with a cocoa powder and coffee blend, for a magnificent marbled effect. Each bite of cake brings together the sweetness of the fruit and the richness of the chocolate and coffee, making it a veritable treat that can be enjoyed at breakfast, on a coffee break, or to end dinner with a sweet note.

Using thawed frozen bananas brings a more pronounced flavour to the cake. The bananas are also saturated with water and will make the cake even more moist.

Instant coffee has a very pronounced flavour and dissolves easily into the batter, unlike ground coffee grains that can leave an unappealing mouthfeel. You can omit the coffee and simply increase the amount of cocoa powder to 1/4 cup (25 g) for a more chocolatey taste.
