Ingredients: 4 oz (115 g) dark chocolate (between 60% to 70%), coarsely chopped; 1/2 cup (115 g) unsalted butter, cubed; 2 eggs; 3/4 cup (160 g) sugar; 1/4 cup (40 g) unbleached all-purpose flour; 1 pinch salt

- 4 oz (115 g) dark chocolate (between 60% to 70%), coarsely chopped
- 1/2 cup (115 g) unsalted butter, cubed
- 2 eggs
- 3/4 cup (160 g) sugar
- 1/4 cup (40 g) unbleached all-purpose flour
- 1 pinch salt

Preparation

- With the rack in the middle position, preheat the oven to 350°F (180°C). Butter a round 8-inch (20 cm) glass or ceramic cake pan.
- In a bowl set over a pot of simmering water or in the microwave oven, melt the chocolate and butter. Let cool.
- In another bowl, whisk the eggs and sugar with an electric mixer until the mixture is tripled in volume and falls from the beaters in a ribbon, about 5 minutes. Add the chocolate mixture and mix until smooth. Stir in the flour and salt. Spread the batter out in the prepared pan.
- Place the cake pan in a large baking dish. Fill the baking dish with enough hot water to come halfway up the side of the cake pan.
- Bake for 35 minutes or until the top of the cake is cooked but the centre is very moist. Remove the cake pan from the water bath. Serve immediately with vanilla ice cream, if desired.
