Courtesy of our own creative culinary chef, Laurence Viens, this Asian-inspired dish brings together all the things you love. It features rice noodles coated in a red curry sauce (a veritable flavour bomb!) that are served over oven-roasted tofu and garnished with sugar snap peas and bell pepper. The simple act of soaking the noodles in hot water, rather than boiling them, ensures a springy and toothsome texture. Finish cooking them in the oven, gently, from the steam emitted from the sauce and the lightly crunchy vegetables, before garnishing with fresh Thai basil. It’s a vegetarian dinner that’s cozy and worthy of any restaurant.

Note from Ricardo

Red curry paste is a spicy condiment made with red chilies, lemongrass, galangal and other spices. It has a rich, complex flavour and a good amount of heat. While some brands of red curry paste are fragrant and mild, others can be very spicy. Adjust the quantity as needed.

Soaking the noodles in hot water, rather than boiling them, guarantees an even more enjoyable texture. The noodles become soft but still have a good chew. Cooking is completed in the oven thanks to the steam released from the sauce and vegetables.
