Ingredients

- 4 small red onions, cut into wedges (see note)
- 1/4 cup (60 ml) beet juice or water
- 1/4 cup (60 ml) apple cider vinegar
- 1/4 cup (55 g) sugar
- 1 tsp salt

Preparation

- In a small pot of salted boiling water, cook the onions for 3 minutes. Drain and rinse under cold running water. Separate the layers of the onions from each other to get petal shapes. Place the onion pieces in a jar or airtight container.
- In the same small pot, bring the beet juice, vinegar, sugar and salt to a boil just until the sugar and salt have dissolved.
- Pour the boiling liquid over the onions in the jar. Cover and let cool. Refrigerate until completely chilled, about 2 hours. The onions will keep for 3 weeks in the refrigerator.

The red onions can be replaced with 2 packages (175 g each) of peeled red pearl onions.
