If you are shelling your own crab, buy a little more than double the weight indicated above. It will take you an additional 20 minutes to shell the crab. The crabmeat can be replaced with Nordic shrimp or lobster.
We prefer serving the inner stalks of the celery with this dip since they’re more tender, juicy, sweet and easier to bite into, with no stringy fibers. For a touch of freshness, we also use the celery leaves as a garnish.
