Seared Scallops with Basil Whipped Cream

  1. In a saucepan, bring the cream to a boil. Remove from the heat. Add the basil, stir and let cool. Refrigerate about 6 hours. Strain the chilled cream. Whisk until soft peaks form. Season with Tabasco sauce, to taste.
  2. In a skillet, sear the scallops in the oil and butter. Season with salt and pepper.
  3. In silver spoons, place about 10 ml (2 teaspoons) of whipped cream, then a warm scallop. Garnish with chives and a pink peppercorn.


Fresh scallops often contain sand, so they should be rinsed thoroughly and patted dry. Be sure to remove the little hard muscle that keeps the scallop in its shell.

Be original; look around your kitchen. Silverware, wonton soup spoons, shot glasses and espresso cups can become very interesting serving receptacles for appetizers.
