    • 1 package wonton wrappers, thawed
  • Filling

    • 8 oz (225 g) lean ground pork
    • 3/4 cup (180 ml) water chestnuts, chopped (or about 3/4 of a 199 g can)
    • 2 green onions, chopped
    • 2 1/2 oz (75 g) dried Chinese mushrooms, rehydrated for 2 hours in warm water, chopped
    • 1/2 teaspoon (2.5 ml) salt
    • 2 teaspoons (10 ml) raw sesame oil
    • 2 teaspoons (10 ml) rice wine

To prepare beautiful half-moon dim sum, as in the picture, we used a ravioli mold, an inexpensive accessory, sold in kitchen stores. Count about a dozen dim sum per person. You can prepare more, they freeze beautifully.
