Preparation

  1. Line two baking sheets with parchment paper or preheat a pizza stone by placing it at the bottom of the oven. Preheat the oven to 190 °C (375 °F).
  2. In a skillet, cook the bacon until it begins to brown. Set aside. Leave the fat in the pan.
  3. Soften the onions in the pan, without browning, until they become translucent. Season with salt and pepper. Place into a bowl and allow to cool.
  4. Divide the dough into quarters and, with your hands, roll out into 4 thin discs.
  5. Spread a little crème fraîche and sour cream on each tart. Sprinkle with the onions and bacon.
  6. Bake for 10 minutes or until the crust begins to brown.
