3 sheets phyllo dough
Approximately 3 tablespoons (45 ml) melted butter
2 logs (100 g) semi-firm goat cheese
6 cups (1.5 litres) mixed greens
1 tomato, seeded and chopped
Vinaigrette
1/3 cup (75 ml) vegetable oil
2 tablespoons (30 ml) white wine vinegar
2 teaspoons (10 ml) Dijon mustard
1/4 teaspoon (1 ml) ground fennel seeds
Salt and pepper
Preparation
Preheat the oven to 180 ºC (350 ºF).
Stack the phyllo sheets, brushing with melted butter between each layer. With a 12.5-cm (5-inch) plate or bowl, cut out 4 circles in the dough. Place on a baking sheet. Bake until the crust is golden brown, about 5 minutes.
In a bowl, whisk together all the vinaigrette ingredients. Set aside.
Cut each log in half crosswise, then each piece lengthwise into four towers for a total of 16 pieces.
At the centre of each plate, place 4 pieces of cheese as a standing support for the phyllo disk. Top with the phyllo disks. Divide the mixed greens among the disks. Drizzle with vinaigrette. Sprinkle with chopped tomatoes.
