Preparation

  1. Preheat the oven to 190 °C (375 °F). Butter 12 muffin cups.
  2. In a bowl, combine the flour, baking powder, baking soda and salt.
  3. In another bowl, blend the remaining ingredients. Add to the dry ingredients and stir gently with a spatula until the mixture is barely moist.
  4. Scoop the batter into the muffin cups. Bake in the middle of the oven until a toothpick inserted in the centre of the muffin comes out clean, about 20 to 25 minutes. Cool slightly, then unmold onto a rack. Delicious warm or cold.

Note

There are now whole-wheat pastry flour in natural food stores. A very interesting product!

  1. These muffins are perfect! I didn't have all the ingredients on hand so I made the following substitutions: - coconut milk with lime (instead of buttermilk) - coconut ghee mixture (instead of the butter) - committed the dates in place of sunflower seeds and flax mixture (1 cup only) - 2 cups spelt flour instead of listed flour. These came out wonderfully and offer a lot of customization as long as you choose suitable replacements. Ricardo wins again!

  2. very good ... I replaced the brown sugar with 1/2 of maples syrup and cut the butter and oil in half to balance the liquids and baked them at 325 !! delicious
