Ingredients: 1 1/4 cups (150 g) pastry flour, preferable (for a crispy texture); 1/4 cup (35 g) icing sugar; 1 tsp baking powder; Pinch of salt; 1/2 cup (125 ml) water; 1 egg; 3 tbsp (20 g) pastry flour; 4 chocolate bars, cut in half crosswise; 8 wood or bamboo skewers about 6 inches (15 cm) long; Canola oil for frying

Preparation

Batter
- Preheat the oil in a deep fryer to 375°F (190°C). Line a baking sheet with paper towels or set a cooling rack on it.
- In a bowl, combine the dry flour, icing sugar, baking powder and salt. Add the water and the egg. Whisk together until the batter is smooth. Pour into a large shallow bowl. Set aside.
Chocolate Bars
- Place the flour on a plate.
- Spear half a chocolate bar onto the end of each skewer. Dredge in the flour, shaking off any excess. Dip the bars into the batter and light drain.
- Fry 4 skewers at a time for 1 to 2 minutes, or until golden brown on all sides. Drain on the baking sheet. Serve immediately.
