  1. With the rack in the middle position, preheat the oven to 375ºF (190ºC).
  2. In a bowl, dissolve the cornstarch in the milk. Add the eggs and whisk to combine. Season with salt and pepper.
  3. Pour into a 30 x 20-cm (12 x 8-inch) buttered baking dish. Bake for about 30 minutes or until the top of omelet begins to brown.


  1. I would like to make this recipe for a community lunch for 64 people. I have multiplied the recipe in terms of ingredients however could you please give me the proper baking time for such a large quantity of eggs, 96 eggs and 10 cups of milk. Thank you very much. I only have room for one huge tray in the oven so I cannot divide the mixture into several casseroles.
