Beef and Oatmeal Soup

  1. In a large saucepan over medium-high heat, brown the beef and onion in the oil. Season with salt and pepper. Add the carrots, celery and garlic. Continue cooking for about 2 minutes.
  2. Add the broth, tomatoes and herbs. Bring to a boil, reduce the heat and simmer until the vegetables are tender, about 20 minutes. Add the oats and simmer for another 3 to 5 minutes. Remove the thyme sprigs and bay leaves. Adjust the seasoning.
