No-Cook Strawberry and Mint Jam

Four 250 ml (1 cup) 




  1. Coarsely crush the strawberries with a potato masher. Add the sugar, mint and lemon zest. Stir to combine and let stand for 15 minutes. Add the pectin and stir for 3 minutes. Let stand for 5 minutes. Pour into sterilized jars. Close tightly and freeze.
  2. The jam will keep in the freezer for up to 1 year or 3 weeks in the refrigerator.
