Tips for a hassle-free unmoulding

If you prepare a jelly or aspic, first brush the inside of the mould that you are using with a thin layer of vegetable oil. Before unmoulding the jelly, run the tip of a knife around the sides of the pan. Soak the pan for a few seconds in a bowl of warm water, then unmould onto a serving plate. Place a few drops of water on the plate: that will allow you to slide and center the jelly, if needed. If the jelly does not easily remove itself from the mould, then it is trapped in the mould by suction. Insert the blade of a knife between the mould and the jelly in order to bring the air; it should solve the problem.
