Spicy Chicken Wings

Preparation

  1. When preparing the wings, you will notice that they have two joints. With a chef's knife, cut the two joints. You will then get three pieces with each wing. Discard the small pointed piece where there is no meat. 


Marinade

  1. In a bowl, combine all the ingredients. Add the chicken wings and coat well with the marinade. Cover and refrigerate for 2 hours or overnight. Line a baking sheet with parchment paper or aluminum foil.
  2. With the rack in the middle position, preheat the oven to 200 °C (400 °F).
  3. Place the wings, side-by-side on the baking sheet. Season with salt and pepper. Bake for about 20 minutes on each side until the meat separate easily from the bone and the wings are golden brown. If necessary, finish cooking under the broiler for crispier wings. 


Hot Sauce

  1. In a saucepan, bring all the ingredients to a boil.
  2. In a large bowl, combine the wings with hot sauce, to taste. Serve immediately. 



Note

You can freeze the wings before or after cooking. Place them on a baking sheet and once frozen, place them in an airtight bag.
