  1. In a skillet over medium-high heat, brown the bread in half of the oil. Set aside. 
  2. In the same skillet, brown the ham in the remaining oil until crisp. Drain on paper towels. Set aside.

Tofu Mayonnaise

  1. In a food processor, combine all of the ingredients. Use a spatula to scrape down the sides of the food processor as needed. Season with salt and pepper.

Assembly

  1. In a bowl, combine the lettuce and mayonnaise. Sprinkle with the croutons, ham, and Parmesan.
