Traditionally made with prosecco, an Italian sparkling wine, this cocktail is perfect for when entertaining over brunch. This version is prepared with peach juice and then garnished with a zest of lemon. This drink emblematic of Venice is refreshing and delicious and, even though it may seem refined, it's actually quite easy to make. It's perfect for any social occasion!

Ingredients

- 1 lemon
- 3 cups (750 ml) apricot or peach juice, cold
- 1 bottle 750 ml sparkling wine, cold

Preparation

- With a vegetable peeler or zester, remove 8 long zests from the lemon. In 8 champagne flutes, pour the juice and sparkling wine in equal parts. Add a twist of lemon on the rim of each glass. Serve cold.

It is not always easy to find peach or apricot juice. There are two brands that I love, Ceres and Wilde. These juices are sold in the refrigerated juice counters in some supermarkets.
