  1. In a small saucepan, dissolve the cornstarch in the broth. Add the remaining ingredients and bring to a boil, stirring constantly. Set aside.

Stir-Fry

  1. Soak the noodles in the boiling water until tender. Rinse under cold running water and drain. Set aside.
  2. In a wok or large non-stick skillet, brown the tofu and carrots in the oil for about 5 minutes. Add the peppers and cook for about 2 minutes.
  3. Add the sauce and the remaining ingredients except for the green onions. Continue cooking, stirring frequently, until the vegetables are al dente. Season with salt and pepper.
  4. In a large serving bowl, place the noodles on one side. Pour the stir-fry on the other side. Sprinkle with the green onions. Serve immediately.
