  1. In a skillet, brown the bread in the butter. Season with salt and pepper. Set aside on a plate.
  2. In the same skillet, brown the bacon until crisp. Drain on paper towels. Set aside. 


Mayonnaise

  1. In a bowl, combine the capers, lemon juice, egg yolk, anchovy paste, and garlic with a whisk. Slowly drizzle in the oil, whisking into a mayonnaise. Adjust the seasoning. Refrigerate, if it needs to wait. 


Assembly

  1. In a bowl, combine the lettuce and mayonnaise. Sprinkle with the croutons, bacon, and Parmesan cheese. 



Comments

  1. One thing I forgot to mention is that I thought that you were not supposed to cut lettuce but to tear the leaves to give it irregular shapes for better presentation.

  2. This salad is OK but lacks the bite that we appreciate in a Caesar. The recipe that I made up makes you sweat after eating it. This one is good for those with gentle palates and no desire for adventure.
