Gazpacho Sauce



  1. In a pot of salted boiling water, cook the pasta al dente. Drain and oil lightly. Cover and refrigerate.

Gazpacho Sauce

  1. Meanwhile, in a blender, purée all the ingredients until smooth. Season with salt and pepper.
  2. In a bowl, combine the pasta, gazpacho sauce, vegetables and basil. Adjust the seasoning. Sprinkle with breadcrumbs. Serve cold.
