    • 1 butternut squash, peeled, seeds removed and cubed (see note)
    • 1/2 cup (125 ml) 35% cream
    • 2 eggs
    • 1/2 tsp turmeric
    • 1/2 tsp curry powder
    • Ground white pepper, to taste

The butternut squash looks like a large pear. Its sweet orange flesh makes excellent soups, purees and flans. You can find it all year-round in the fruit and vegetables section. With the remaining butternut squash purée, you can make a soup or add it to mashed potatoes.
