Strawberry Butter

about two 250 ml (1 cup) 




  1. In a saucepan, cook the strawberries and apples over high heat for 10 minutes, stirring frequently.
  2. In a food processor, purée the fruit until smooth. Strain and return to the same saucepan.
  3. Bring to a boil and simmer gently for about 2 hours and 30 minutes, stirring frequently, until it has the texture of soft butter.
  4. Sweeten to taste.
  5. This butter will keep for up to two weeks in the refrigerator.

Do not remove the skin: it contains pectin, which helps to thicken the butter.

To avoid messy splashes, use a splatter guard. To check for doneness of any fruit butter, spoon a drop on a cold plate. There shouldn’t be any liquid running from the fruit puree.
