    • 4 1/2 lbs (2 kg) Anjou pears, cored and sliced (about 12 pears)
    • Juice of 1 lemon
    • Sugar

Pears
Do not remove the peel: it contains pectin, which helps to thicken the butter.

Step 1
This recipe can also be prepared in the microwave oven. Follow the technique of the Apple Butter in the microwave.

Step 3
Use a splatter guard to prevent messy splashes. Stir more frequently toward the end of cooking because the sweet butter may stick to the bottom of the pan.


Change the flavour!

For variety, add a cinnamon stick, star anise or vanilla bean for the last 30 minutes of cooking.

If you like pears, you will fall for this creamy pear butter to spread on your toast. For dessert, serve with ice cream and a piece of vanilla, chocolate or spices cake.
