The butter can be cut into the dry ingredients in a food processor.
You don’t really need to knead the dough but just roll it on itself so it holds together.
Just before baking, you can brush the scones with 35% cream and sprinkle lightly with sugar.

Add 1 cup (140 g) of raisins or dried cranberries or 1/2 cup (140 g) chopped candied ginger to the dry ingredients just before adding the buttermilk.
